Kale Parmesan Salad

This salad is where I turn when I feel like I need a big pile o’ greens. The flavors are robust and the tough kale keeps well. It’s great for a to-go lunch and yummy enough for a dinner party offering.

I understand how hard it can be to find the time and money to cook yourself nutritious foods. I nearly did not share this recipe because I wasn’t able to properly grocery shop until just before our publishing day. This salad takes a bit of effort in the chopping but can make a large and actually filling salad in just a few minutes, with minimal clean up. It also can cost less than $3.00 a serving.

What you'll need

Instructions:

**the amounts are highly variable to your tastes**
  • A big bunch of your favorite kinda kale
  • Parmesan cheese (any kind works but I like to use one with a bit of heft, like a block that I can cut or kind that comes in big flakes) (the amount is really up to you, I like a lot! Just a little bit less than the apple and onion)
  • About ⅔ of a crisp apple
  • About a ⅓ of your favorite kind of onion
  • A splash of oil and vinegar
  • A dash of crushed black pepper​
  • Cut everything into a small to medium dice, so that it is all about the same size.
  • Toss in a large bowl.
  • Add oil, vinegar, and pepper to your taste.
  • Toss again, and enjoy!
